Wine from grapes grown in our Fuenmayor vineyards, aged over 30 years. In an enviable situation due to its exposure and gentle slope, as well as suitable clayey-calcareous soil. Our experience in managing viticulture allows us to carry out excellent production control, both in quantity and quality, without a doubt, key to obtaining a quality wine.
The varieties that make it up are: 100% Tempranillo.
Our ancestors, throughout the successive family generations, already made wines in our old cellars, with the traditional methods of the area.
We currently make this wine using the most modern systems: The grapes are subjected to rigorous controls upon entering the winery, before unloading into the reception hopper.
Subsequently, the grape is destemmed (so that the herbaceous parts are eliminated) and crushed, thus being ready to be transferred to the fermentation tanks.
Once inside, the alcoholic fermentation begins, with a rigorous temperature control around 28ºC. In this phase, periodic pump-overs and delestages take place; applying a prolonged post-fermentation maceration.
Once the alcoholic fermentation is over, malolactic fermentation takes place, thus ending the biological processes that transform the grapes into wine.
After several cleaning rackings, it is placed in fine-grained French and American oak barrels, where it remains for a year, with racking every six months.
Subsequently, it is bottled without any treatment, so with the passage of time, it may present some precipitate, which does not reduce its quality at all. Remaining at rest for a long time, before going on the market.
